On your next RV trip, try preparing meals using foil packets for a healthy way to cook with the added bonus of little to no clean-up!

When my family and I have finished setting up the RV and are relaxed and enjoying the outdoors, food is always the next thing on our minds. When to eat and what to eat are questions that can be easily answered by using foil packet meals. For breakfast, lunch or dinner, wrapping ingredients in a loosely sealed foil sack and throwing them in the oven, on the grill, or over the campfire make for simple camping fare.

The How-to for foil packets is rather basic. Take a large piece of heavy duty aluminum foil, around roughly 12 inches by 15 inches, or possibly more depending on the amount of ingredients being used, and assemble food items in the center. When all ingredients are in place, pull up 2 opposite sides of the foil piece and gently fold them together, leaving room between the food and the folded foil for steam and heat to circulate. Gently seal both ends of the foil making a rectangular shaped packet. Place wrapped entrees onto a sheet pan to be cooked in an oven, or directly on a grill grate or rack placed over an open campfire. Foil packets cook rather quickly, around 20 minutes on a medium-high heat, and make mealtime cleanup a breeze.

For breakfast, try a sausage and potato hash with a fried egg placed on top after cooking. Lunch could be as simple as a ground beef patty topped with onions and mushrooms. For dinner, upgrade to a salmon filet or the fresh catch of the day!
